These vanilla protein balls are the PERFECT little snack to have before or after the gym. They are totally guilt free as they have no added sugar but they satisfy my sweet tooth cravings as they are so sweet from the medjool dates. I love this recipe because you don’t need to cook anything, you just simply roll the mixture into bite sized balls and then put them in the fridge ready for eating. They literally taste like cookie dough which is one of my all time favourite flavours.
One downside is that I didn’t really enjoy kneading the mixture with my hands because I hate getting my hands sticky. If anyone has any ideas for contraptions where I don’t have to use my hands that would be amazing haha!
I am realising throughout my cooking journey that my favourite part about cooking is the TASTE TESTING!! Overall I would rate this recipe a 6 out of 5 stars because they are just that good!
Recipe
Ingredients (Makes 12):
2 Packets Vanilla Protein Powder
2 tbsps Almond Meal
1 tbsp Nut Butter
8 Medjool Dates
2 tbsps Coconut Oil
1/4 block of Dark Chocolate
Utensils:
Large Mixing Bowl
3 Table Spoons
Knife
Chopping Board
Storage Container
Steps:
First combine the two dry ingredients - protein powder and almond meal - in the large mixing bowl.
Next use the chopping board to slice the medjool dates and take out their seeds. Then chop them up until they are basically a pile of mush.
Add the dates, coconut oil and nut butter to the dry ingredients and knead with your hands until the mixture comes to together like a dough. If it is crumbly or too dry, add more coconut oil. If it is too wet, add more almond meal.
Roll the mixture into bite sized balls and place each one into the storage container. Once you have used up all the mixture, place the lid on the container and put them in the fridge to let them harden.
Eat and enjoy - but BE CAREFUL they are so tasty you won’t know when to stop!!!
