Recipe Review: Lorraine’s Chocolate Cake
On the weekend, I made a delicious chocolate cake for my 26th birthday. I got the recipe from my friend’s Mum, Lorraine who is a fantastic cook. I enjoyed mixing the ingredients together and watching it bubble in the saucepan when I added the bicarb soda. I found it a bit difficult checking when the cake was cooked in the oven as my Dad and I pulled it out too early and the middle sunk a little bit. But not to worry! Mum helped salvage it but adding M&Ms to the middle which turned out to be a nice surprise when I cut the cake. I made a rich chocolate icing with cocoa, butter and icing sugar which to put simply was the icing on the cake! (pun intended). I am very glad I made my cake from scratch instead of buying it from the supermarket as it was made with love and I got to share it with my friends. They absolutely loved it and couldn’t stop raving about it!

Ingredients:
CAKE:
3 cups of Sugar
250g butter
2 cups of water
1 tsp bicarb soda
3 tblsp cocoa
4 eggs
3 cups of plain flour
6 tsp baking powder
ICING:
1 cup of icing sugar
1/4 cup of boiling water
2 tblsp of cocoa
Steps:
Preheat oven to 180 degrees.
Place sugar, butter, water, cocoa and bicarb soda in the saucepan and bring to boil for 3 minutes. Cool slightly.
Add eggs and flour.
Grease cake tin and line with baking paper.
Add mixture to cake tin and place in oven.
Cook for 35 to 40 minutes. Use a skewer to check if cooked (if it comes out clean it’s ready).
While the cake cools, mix the icing ingredients together until smooth but not too runny.
Ice and eat! YUM!
Notes:
To decorate the cake I chopped up dark and white chocolate and sprinkled on top of the icing while it was still wet. This is just one way I like to decorate but you can alternatively use other decorations like sprinkles or lollies.
